Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed fennel seeds
  • 4 ounces butter, cubed
  • 1/4 cup sour cream
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon cream (for egg wash) Coarse sugar (for sprinkling) 1 pound apricots, pitted and quartered (skin on) 8 cherries, sliced in half 1/4 cup sugar 1 teaspoon lemon zest 1 teaspoon minute tapioca or cornstarch 1/4 teaspoon vanilla extract

Instructions

1. Make the dough: In a large bowl, whisk together flour, sugar, salt and fennel seeds. Add butter and work into the flour with your hands until mixture resembles crumbs and no piece of butter is bigger than a pea.

2. Make a well in center and add sour cream. Use fork to work flour into sour cream until combined.

3. Form dough into a ball and flatten into disk shape. Refrigerate for 1 hour before rolling out.

4. Toss apricots with sugar, lemon zest, tapioca and vanilla extract: Put apricots and cherries into separate bowls. In the bowl with apricots, add sugar, lemon zest, minute tapioca and vanilla extract; gently toss to combine ingredients evenly.

5a) Roll out dough: Place parchment paper onto baking sheet . Roll out dough on lightly floured surface until it reaches desired thickness/size (if too sticky to roll out easily, place in fridge for 10 minutes).

5b) Carefully transfer rolled-out dough onto prepared baking sheet by folding pastry around rolling pin then unrolling over top of parchment paper on baking sheet..

6) Arrange fruit on rolled-out
