Ingredients

  • 1 1/2 pounds beef fajita-cut strips
  • 2 large onions, sliced
  • 4 large bell peppers (any color), sliced
  • 8 small flour tortillas
  • 1 packet of fajita seasoning
  • 1/4 cup vegetable oil
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8 cups shredded cheese (Monterey Jack or Cheddar work well)
  • Optional toppings: diced avocado, diced tomatoes, shredded lettuce, sour cream, salsa

Instructions

Slice the beef into thin strips and season with fajita seasoning, garlic powder, chili powder, salt, and pepper. Let it marinate for at least 30 minutes.

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

Remove the beef from the marinade, letting any excess liquid drip off. Add the beef to the skillet and cook for 3-4 minutes per side, or until cooked to your desired level of doneness.

Transfer the beef to a plate and cover with foil to keep warm.

In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the sliced onions and bell peppers and cook until they’re tender, about 5 minutes.

Add the butter to the skillet and stir until melted.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the fajitas by slicing the beef into thin strips and adding them to the tortillas along with the sautéed onions and peppers.

Top with shredded cheese and any desired toppings.
