Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/4 cup soft margarine
- 3/4 cup peanut butter
- 1 teaspoon vanilla extract
- 1 egg
- 3//4 confectioners’ sugar
Instructions
1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. In a small bowl, mix together 1 1/2 cups all-purpose flour, 1/2 cup unsweetened cocoa powder, and 1/2 teaspoon baking soda. Blend until the ingredients are well combined.
3. In a large bowl, beat together 1/2 cup white sugar, 1/2 cup packed brown sugar, 1/4 cup soft margarine, and 3/4 cup peanut butter until the mixture is light and fluffy. Add 1 teaspoon vanilla extract and one egg to the mixture and beat again until everything is combined. Stir in the flour mixture from step 2 until it is fully blended with the other ingredients. Set this bowl of dough aside for now.
4. To make the filling: In a separate bowl, combine 3//4 confectioners’ sugar and 3/4 cup peanut butter and blend well until there are no lumps remaining. Roll this mixture into 30 balls that are each about one inch in diameter (you can use a spoon or your hands to do this).
5. For each cookie, take one tablespoon of dough from step 3 and shape it around one of the filling balls from step 4 so that it is completely
