Lemon Pepper Chicken

Ingredients
- 2 1/4 pounds boneless, skinless chicken breasts cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon lemon zest
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2 lemons juiced
- 1/4 cup chicken broth
- 1/4 cup white wine (optional)
- Fresh parsley chopped (optional)
Instructions
Preheat your oven to 400°F (200°C). In a large bowl, whisk together olive oil, garlic, lemon zest, black pepper, salt, and paprika.
Add the chicken pieces and toss to coat evenly, making sure they’re all coated with the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours. Line a baking sheet with aluminum foil or parchment paper, leaving some overhang for easy cleanup.
Remove the chicken from the marinade, letting any excess liquid drip off.
Arrange the chicken pieces in a single layer on the prepared baking sheet. Bake the chicken in the preheated oven for 25-30 minutes, or until cooked through.
While the chicken is baking, prepare the sauce.
In a small bowl, whisk together lemon juice, chicken broth, and white wine (if using). After the chicken has baked for 20 minutes, brush the top of each piece with the lemon sauce.
Return the chicken to the oven and bake for an additional 5-10 minutes, or until the sauce is caramelized and the chicken is cooked through.
Remove the chicken from the oven and sprinkle with chopped parsley (if using). Serve hot and enjoy!
Notes
You can adjust the amount of garlic and lemon zest to your taste. If you prefer a stronger lemon flavor, use more zest or add some lemon slices on top of the chicken before serving.
If using white wine, be sure to use a dry white wine as it will reduce and intensify the flavor during baking.
Letting the chicken marinate for the full 2 hours will result in more flavorful and tender chicken, but 30 minutes will still give you great results. Make sure to not overcrowd the baking sheet, as this can prevent the chicken from cooking evenly.
If necessary, use multiple baking sheets.
You can serve this dish with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh green salad. Chicken pairs well with a variety of flavors, so feel free to get creative!
