This bread recipe is one of my favorites! It’s easy to make and so delicious. The best part is that it only takes a few ingredients that you probably already have in your kitchen.

Ingredients

  • -1/4 cup chopped sun dried tomatoes
  • -2 1/2 cups all purpose flour
  • -2 tablespoons white sugar
  • -2 teaspoons baking powder
  • -1/2 teaspoon baking soda
  • -1/4 teaspoon salt
  • -1 teaspoon dried rosemary
  • -2 tablespoons dried parsley
  • *For the cheese:
  • -1 cup shredded sharp cheddar cheese
  • OR
  • -3/4 cup crumbled feta cheese (for a more traditional Italian bread)
  • *If using feta, also add in:
  • -6 Kalamata olives, pitted and roughly chopped OR any other type of pitted olive

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 loaf pan.

2. Whisk together the oil, egg, and buttermilk in a small bowl.

3. In a large bowl, whisk together flour, sugar, baking powder, soda, salt, and dried herbs. Stir in cheese and onions until evenly distributed. Pour buttermilk mixture into the flour mixture; stir to combine well then add garlic and tomatoes until evenly distributed throughout batter.

4. Spread batter into prepared pan; smooth top with spatula then tap pan on counter several times to remove any bubbles that may have formed during mixing process.)

5 Bake for 60 to 65 minutes or until golden brown then cool loaf on wire rack prior to slicing and serving
