Hamantashen I

In Ashkenazi Jewish cuisine, hamantashen or Oznei Haman are three-cornered pastries shaped like triangles and filled with a variety of fillings. They are usually made from sweet yeast dough or shortcrust pastry, and the most common fillings are poppy seed, prune butter, and apricot. Hamantashen are traditionally eaten during the Purim holiday to commemorate the defeat of Haman in the story of Esther.

Ingredients

  • 1 (.25 ounce) package active dry yeast
  • 1 cup milk, lukewarm
  • 3/4 cup sugar
  • 1/2 cup butter, softened
  • 1 teaspoon salt
  • 5 1/4 cups all-purpose flour, divided
  • 2 eggs
  • 1 (12 ounce) can poppyseed filling OR 3/4 cup homemade poppyseed filling
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 egg yolk beaten with 1 tablespoon cold water

Instructions

1. In a small bowl, soften the yeast in 1/4 cup of warm water.

2. In a larger bowl or in a stand mixer, heat milk, sugar, butter or margarine and salt until the sugar dissolves; cool to lukewarm.

3. Stir in 2 eggs to the milk mixture.

4. Add the yeast mixture and 2 cups of flour, mix well until all ingredients are fully incorporated..

5 Stir in enough of the rest of the flour to make a moderately stiff dough- you may not need to use all 5 1/4 cups . Knead on a floured surface for about 5 minutes until smooth then shape into ball. Place dough into greased bowl , cover with towel and let rise until doubled in size, about an hour depending on temperature conditions .

6 Once risen , divide dough into two halves .

7 To make filling : Combine poppy seeds with lemon peel and lemon juice , mix well and set aside

8 Roll each half of risen dough out into 17 x 12 inch rectangle on lightly floured surface . Using large biscuit cutter or glass , cut circles out of rolled dough – should get about 16 circles total

9 Take one circle at time ,
