Ingredients

  • 1 cup quick-cooking oats
  • 1 cup milk
  • 1 egg
  • ½ cup vegetable oil
  • ¾ cup brown sugar
  • ¾ cup semisweet chocolate chips or chopped chocolate
  • 1 cup chopped pecans or walnuts (optional)
  • 1½ cups all-purpose flour*
  • 4 teaspoons baking powder**
  • 1 teaspoon salt***
  • * You can use up to 2 cups of whole wheat flour for a healthier muffin. If you do, reduce the milk to ¾ cup. **If using self-rising flour, omit baking powder and salt. ***Use sea salt for a more flavorful muffin

Instructions

1. Combine oats and milk in a bowl, and let stand for 15 minutes.

2. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin with oil or butter.

3. In another bowl, whisk together egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans. Add this mixture to the oat mixture from Step 1 and stir until combined.

4. In a third bowl, combine flour, baking powder and salt.* Add the wet ingredients from Step 3 to this bowl and mix until just moistened** – do not overmix!

5. Fill each cup of your prepared muffin tin 2/3 full with batter*** using a spoon or scoop . Sprinkle tops with the remaining brown sugar and pecans if desired . Bake at 400 degrees F (205 degrees C) for 20-25 minutes or until golden brown on top**** and a toothpick inserted into the center comes out clean or with only a few crumbs attached . Allow to cool in pan for 5 minutes before removing to wire rack or plate to finish cooling completely
