Ready Time

45 mins

Yields

8 servings

Ingredients

  • 1 head of cauliflower
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

Preheat your oven to 425°F (220°C). Rinse the cauliflower and remove the leaves and stem.

Cut it into florets, about 1 inch (2.5 cm) in size.

In a shallow dish, mix together the panko breadcrumbs, Parmesan cheese, flour, oregano, basil, garlic powder, salt, and black pepper. In a separate dish, pour the olive oil.

Dip each cauliflower floret into the olive oil, coating it lightly, then roll it in the breadcrumb mixture to coat.

Place the coated cauliflower on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown, flipping the cauliflower halfway through.

Remove from the oven and let cool slightly before serving.

You should end up with 8 servings, perfect for a snack or side dish!

Notes

Use fresh cauliflower for the best results – it will yield a crisper exterior.

Don’t overcrowd the baking sheet, as this can prevent even browning.

For a spicy kick, add a pinch of red pepper flakes to the breadcrumb mixture.

To freeze, place the coated cauliflower on a baking sheet and put it in the freezer.

Once frozen, transfer to an airtight container or freezer bag for up to 3 months.

Bake frozen cauliflower at 425°F (220°C) for an additional 5-7 minutes.

You can also make these in an air fryer – preheat to 400°F (200°C) and cook for 10-12 minutes, shaking halfway through.
