Baked Beef Taquitos

Ingredients
- 1 pound beef, ground
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8-10 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped fresh cilantro
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a large skillet, heat the olive oil over medium-high heat.
Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
Add the ground beef to the skillet, breaking it up with a spoon as it cooks, until it’s no longer pink, about 5-7 minutes.
Stir in the cumin, chili powder, paprika, salt, and black pepper. Cook for 1 minute, until the spices are fragrant.
In a large bowl, combine the cooked beef mixture and chopped cilantro.
Mix well to combine. To assemble the taquitos, lay a tortilla flat and spoon about 1/4 cup of the beef mixture onto the center of the tortilla, leaving a 1-inch border around the edges.
Sprinkle some shredded cheese on top of the beef.
Roll the tortilla up tightly and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and beef mixture.
Bake for 15-20 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.
Serve hot and enjoy!
Notes
Use 90% lean ground beef for the best flavor and texture. Don’t overcook the beef, it should be fully cooked but still juicy.
If using low-quality tortillas, they might crack when rolled, so try to use high-quality ones.
You can also add diced bell peppers or diced tomatoes to the beef mixture for extra flavor. Don’t overcrowd the baking sheets, bake in batches if necessary.
For extra crispy taquitos, spray with cooking spray before baking.
You can prepare the beef mixture ahead of time and store it in the fridge for up to 2 days.
