- 1 pound beef, ground

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8-10 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped fresh cilantro
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a large skillet, heat the olive oil over medium-high heat.
Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
Add the ground beef to the skillet, breaking it up with a spoon as it cooks, until it’s no longer pink, about 5-7 minutes.
Stir in the cumin, chili powder, paprika, salt, and black pepper. Cook for 1 minute, until the spices are fragrant.
In a large bowl, combine the cooked beef mixture and chopped cilantro.
Mix well to combine. To assemble the taquitos, lay a tortilla flat and spoon about 1/4 cup of the beef mixture onto the center of the tortilla, leaving a 1-inch border around the edges.
Sprinkle some shredded cheese on top of the beef.
Roll the tortilla up tightly and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and beef mixture.
Bake for 15-20 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.

Use 90% lean ground beef for the best flavor and texture. Don’t overcook the beef, it should be fully cooked but still juicy.
