Ranch Flavored Mashed Cauliflower

Ingredients
- 1 large head of cauliflower, broken into florets
- 2 tablespoons unsalted butter
- 1/2 cup grated cheddar cheese
- 1/2 cup half-and-half or heavy cream
- 1 tablespoon ranch seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Steam the cauliflower florets in a large pot with about 2 inches of water until tender, about 10-12 minutes.
Drain the water and let the cauliflower cool slightly.
Transfer the steamed cauliflower to a blender or food processor and add the butter, cheddar cheese, half-and-half or heavy cream, ranch seasoning, salt, and black pepper.
Blend the mixture until smooth and creamy, stopping to scrape down the sides as needed.
Transfer the mashed cauliflower to a serving dish and serve hot.
Notes
For a creamier mash, be sure to not over-drain the cauliflower, as it still needs a bit of moisture to blend smoothly. If you’re not a fan of ranch, you can easily substitute the seasoning with other flavors like garlic powder or dried herbs.
To make ahead, steam and blend the cauliflower up to a day in advance, then reheat in the oven or microwave until hot and creamy.
For an extra rich mash, try adding in some grated Parmesan or crumbled bacon. This recipe makes 5 servings, so feel free to adjust the ingredient quantities as needed for your gathering.
