Ready Time

1 hrs 15 mins

Yields

3 servings

Ingredients

  • 3 sweet potatoes
  • 3 teaspoons olive oil
  • 6 slices bacon
  • 1 onion, diced
  • 1 Granny Smith apple, cored and diced
  • 3 scallions, sliced, white and green parts divided
  • salt and freshly ground black pepper to taste
  • 3/4 cup shredded Cheddar cheese

Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Gently wash and pat dry the sweet potatoes; prick them with a fork, drizzle with olive oil, and arrange on the prepared baking sheet.

Bake until they begin to soften, about 30 minutes, then remove from the oven and let cool for a few minutes.

Carefully slice the sweet potatoes lengthwise and scoop out the flesh, leaving a 1/4-inch layer at the bottom.

Slice the removed flesh into 1/2-inch cubes and set aside.

Place the empty potato skins back on the baking sheet, cut side down, and bake for 5-10 minutes until crispy.

In a large skillet, fry bacon over medium heat until crispy (3-4 minutes per side).

Remove, crumble, and set aside.

Add onion to the bacon fat and sauté for 3 minutes.

Next, add apples, sweet potato cubes, and the white parts of scallions.

Cook for 8-10 minutes, stirring偶尔, until apples soften, and sweet potatoes are tender.

Mix in bacon crumbles and season with salt and pepper to taste.

Divide the mixture evenly among the four potato boats and sprinkle with shredded cheddar cheese.

Return to the oven and bake for about 5 minutes, or until the cheese has melted.

Once the potato boats are out of the oven, garnish with reserved scallion greens and serve warm.
