Ingredients

  • 1 1/4 cups (2 1/2 sticks) unsalted butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 4 large eggs, beaten
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped walnuts or pecans
  • 2 teaspoons vanilla extract
  • 7 ounce jar marshmallow creme OR fluff*
  • 1/4 – 1//2 cup milk as needed**
  • 3 cups confectioners’ sugar sifted if lumpy // more as needed to spread consistency and for taste up to a full 16 oz box.*** recipe originally called for 8oz but I find 12 -16 oz works best. If you want it sweeter add more sugar. For deeper chocolate flavor use less milk and add another few Tbsp of cocoa powder to the frosting)****

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9×13 inch cake pan.

2. In a large sauce pan over low heat, melt 1 cup of the butter with the cocoa. Stir often. Remove from heat and add white sugar, beat well. Beat in eggs one at a time until combined.

3. Combine flour, baking powder, and salt and stir into the egg mixture until just combined then stir in the chopped nuts and 1 teaspoon vanilla extract until evenly distributed throughout batter Pour batter into prepared pan..

4. Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes or until toothpick comes out clean when inserted into center of cake Remove cake from oven and spread marshmallow creme/fluff evenly over top of hot cake using an offset spatula Then spoon chocolate icing over marshmallow topping while cake is still hot spreading it slightly with back of spoon as you go around so that some of the chocolate seeps down sides Cake will get “muddied” by this action but that is what you want Set aside to cool completely before serving
