Double Tacos
Double the fun with these Double Tacos, packed with flavorful ground beef, black beans, and crunchy veggies, all wrapped in a crispy corn tortilla. A delicious twist on traditional tacos, this recipe adds an extra layer of flavor and texture that’s sure to satisfy your cravings!

Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 packet of taco seasoning
- 8 corn tortillas
- 16 ounces can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 can diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped scallions
- Salt and pepper, to taste
- Vegetable oil, for cooking
Instructions
Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks.
Drain excess fat.
Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
Add the packet of taco seasoning to the skillet and stir to combine.
Cook for 1-2 minutes, until the flavors are fragrant.
In a separate pan, warm the tortillas over medium heat for about 30 seconds on each side.
This will make them more pliable and easier to fold.
To assemble the tacos, lay a tortilla flat and spoon some of the beef mixture onto the center of the tortilla.
Add a spoonful of black beans, diced red bell pepper, and diced tomatoes on top of the beef.
Sprinkle shredded cheese, chopped cilantro, and chopped scallions over the top of the filling.
Season with salt and pepper to taste, and fold the tortilla in half to enclose the filling.
Repeat with the remaining ingredients, using about 1/4 cup of the beef mixture per taco.
Cook the folded tacos in a large skillet with a small amount of vegetable oil over medium heat, until the tortillas are crispy and the cheese is melted.
Serve hot and enjoy!
Notes
Use 90% lean ground beef for a leaner option, or 70% lean for a more flavorful option. Make sure to not overcook the ground beef to avoid toughness.
If using leftover taco seasoning, reduce the amount used based on personal taste.
For a vegetarian option, substitute ground beef with roasted and mashed sweet potatoes. Use store-bought taco seasoning if you don’t have time to make your own.
To make ahead, assemble the tacos up to a day in advance, but do not cook until ready to serve.
For a variation, top with diced avocado, sour cream, or salsa for added flavor.
