- For the Cupcakes:
- all-purpose flour 1 and 1/8 cups
- granulated sugar 1 and 3/8 cups
- unsweetened cocoa powder 1/2 cup
- baking powder 1 teaspoon
- salt 1/2 teaspoon
- whole milk at room temperature 1/2 cup
- large eggs at room temperature 2
- vegetable oil 1/4 cup
- vanilla extract 1 teaspoon
- For the Frosting:
- unsalted butter softened 1 and 1/2 sticks
- cream cheese softened 8 ounces
- granulated sugar 1 and 1/2 cups
- Oreo cookies crushed 1 cup
- vanilla extract 1 teaspoon
- Note: You may need additional Oreo cookies for garnish.
Instructions
Preheat your oven to 350°F (180°C). Line a 7-cup muffin tin with paper liners.
In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
Set aside. In a large bowl, whisk together milk, eggs, oil, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, whisking until just combined.
Be careful not to overmix. Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Let the cupcakes cool completely in the pan. For the frosting, beat the butter and cream cheese together until smooth and creamy.
Gradually add the sugar, beating until smooth and creamy.
Beat in the crushed Oreos and vanilla extract. Once the cupcakes are completely cool, frost each cupcake with a generous amount of frosting.
You may garnish with additional crushed Oreos, if desired.
Notes
For the best results, make sure to use room temperature eggs and milk for the cupcakes, as this will help the ingredients mix together smoothly and evenly. Don’t overmix the cupcake batter, as this can result in dense, tough cupcakes.
Stop whisking as soon as the ingredients are just combined.
If you want a stronger chocolate flavor, you can add a bit more cocoa powder to the dry ingredients. Just be careful not to add too much, as this can make the cupcakes bitter.
