Caramel Apple Monkey Bread

This monkey bread is so good, it’ll make you go bananas! It’s super easy to make and only requires a few ingredients. The best part is that it’s oozing with caramel and studded with chunks of fresh apple. I like to serve mine warm, straight from the oven, but it’s just as delicious at room temperature.


  • 1 1/4 c whole milk, warmed
  • 2 tsp active dry yeast
  • 1/4 c sugar, divided
  • 4 c all-purpose flour
  • 1 1/2 tsp kosher salt
  • 3 Tbsp unsalted butter, melted
  • 1 Tbsp unsalted butter
  • 1 medium sweet-tart apple, peeled and diced (about 1 1/2 cups)
  • 1/4 tsp ground cinnamon
  • Pinch kosher salt
  • Caramel:
  • ½ c sugar
  • ½ c plus 2 Tbsp apple cider, divided
  • 2 Tbsp unsalted butter
  • ½ tsp salt
  • Topping: ¼ cup heavy cream ¼ cup light brown sugar ¾ teaspoon ground cinnamon 6 tablespoons (¾ stick; 85g) cold unsalted butter, cut into cubes


1. Whisk milk, yeast, and 2 tablespoons sugar in a measuring cup. Let it sit to become foamy.

2. In the bowl of a stand mixer fitted with the dough hook, whisk together remaining sugar, flour, salt, and 3 tablespoons melted butter. Add yeast-milk mixture. Mix on low speed until a shaggy dough forms, then turn the mixer up to medium-low and knead for 10 minutes (set a timer!).

3. When done, gather dough into a ball with your hands and place into a greased bowl. Cover well with plastic wrap and let rise on counter for 1 hour or in fridge overnight.

4 . Melt butter for apples in a medium skillet. Add diced apples cinnamon ,and a pinch of salt . Cook over medium heat for about five minutes until apples are just tender . Remove from heat and set aside to cool .

5 . In large saucepan ,combine sugar and 1/2 cup apple cider ,stirring over low heat until sugar has dissolved

6 . Once sugar has dissolved stop stirring increase heat to medium -low bring mixture to boil

7 continue boiling( without stirring )until sugar turns deep golden caramel color 320f to 330f remove from heat
