Ready Time
1 hrs 10 mins
Yields
4 servings
Ingredients
- 1/4 cup (1/2 stick) unsalted butter, at room temperature
- 1/4 cup confectioners’ sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped semi-sweet chocolate chips
- 1/2 cup chopped pecans or walnuts (optional)
- 1/4 cup flaky sea salt (optional)
Instructions
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone mat, set aside.
In a large bowl, cream together the butter and confectioners’ sugar until light and fluffy.
Add the brown sugar and beat until well combined.
Beat in the egg and vanilla extract until smooth.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Fold in the chocolate chips and nuts (if using).
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Sprinkle with flaky sea salt (if using).
Bake for 10-12 minutes or until the edges are lightly golden brown.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Make sure to use room temperature butter for the best results.
If you don’t have confectioners’ sugar, you can make your own by blending granulated sugar in a food processor until it’s finely ground.
For an extra crispy exterior and chewy interior, take the cookies out of the oven when they’re lightly golden brown.
If you’re feeling extra fancy, sprinkle those flaky sea salt crystals on top of the cookies before baking for a salty-sweet contrast.
If nuts aren’t your thing, simply omit them or substitute with your favorite mix-in.
These cookies are perfect for a small gathering, but if you need to feed a crowd, simply double or triple the recipe.
