Queso fresco or Oaxaca cheese takes center stage in these delicious, foldable bites, packed with fresh cilantro, onion, and jalapeño, all wrapped in warm corn tortillas.

- 1 pound soft cheese crumbles, such as queso fresco or Oaxaca cheese
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1 jalapeño pepper, seeded and finely chopped
- 1 lime, cut into wedges
- 8 corn tortillas
- 1/4 cup chopped fresh scallions, for garnish
- Salt, to taste
Instructions
Start by preparing your ingredients: crumble the soft cheese into a bowl, chop the cilantro, red onion, and jalapeño pepper, and cut the lime into wedges.
In a large bowl, combine the crumbled cheese, chopped cilantro, red onion, and jalapeño pepper.
Mix well until all the ingredients are fully incorporated.
Season the cheese mixture with salt to taste.
You can always add more salt later, but it’s better to start with a small amount and adjust to your liking.
Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
This will make them more pliable and easier to fold.
Assemble the tacos by spooning the cheese mixture onto a tortilla, leaving a small border around the edges.
You can be generous with the filling, but don’t overfill the tacos or they might break.
Fold the tortillas into a U-shape to enclose the filling.
If needed, you can use a small toothpick to hold the taco in place.
Garnish with chopped scallions and serve with a lime wedge on the side.
Squeeze a sliver of lime juice over the taco for an extra burst of flavor.
