Ready Time

Yields
7 servings
Ingredients
- 1 1/2 cups almond flour
- 1/2 cup coconut sugar
- 1/4 cup granulated sugar
- 1/2 cup vegan butter softened
- 1 large egg replacement (such as Ener-G Egg Replacer mixed with 2 tablespoons water)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semisweet vegan chocolate chips
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium-sized bowl, whisk together the almond flour, coconut sugar, granulated sugar, baking soda, and salt.
Set aside. In a large bowl, cream together the vegan butter and egg replacement until smooth.
Add the vanilla extract and mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the chocolate chips.
Scoop 7 balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Make sure to use a high-quality almond flour that is finely ground for the best results. If using Ener-G Egg Replacer, mix it with 2 tablespoons of water before adding it to the recipe.
Use a room temperature vegan butter for easier mixing.
Chill the dough for about 30 minutes if you find it too sticky. For a crisper cookie, bake for 12 minutes, and for a chewier cookie, bake for 10 minutes.
If you don’t have parchment paper, you can use a silicone mat or lightly grease the baking sheet.
Let the cookies cool completely on the wire rack before storing them in an airtight container to maintain freshness.
