Ready Time

1 hrs 20 mins

Yields

9 servings

Ingredients

  • 2 large ripe bananas, mashed
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chopped fresh strawberries
  • 1/2 cup chopped walnuts (optional)

Instructions

Preheat your oven to 375°F (190°C).

Line a baking sheet with parchment paper or a silicone mat.

In a large mixing bowl, cream together the butter and sugars until light and fluffy.

Beat in those mashed bananas until well combined.

Next, beat in the eggs one at a time, followed by the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the oats, strawberries, and walnuts (if using).

Don’t overmix! Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake for 12-14 minutes or until the edges are lightly golden.

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Let those delicious cookies cool before serving.

Notes

Use very ripe bananas for the best flavor. If they’re not ripe enough, the cookies might turn out a bit dense.

Room temperature butter is essential for a light and fluffy texture.

Don’t overmix the dough, or your cookies might spread too much while baking. If you choose to add walnuts, toast them in a 350°F oven for 5-7 minutes to bring out their flavor.

Fresh strawberries are a must – they add natural sweetness and amazing flavor.

Don’t overbake – the edges should be lightly golden, but the centers should be soft and chewy. These cookies are perfect for a snack or dessert, and they freeze well if you want to store some for later.
