Peanut Butter Cornflake Crunch Bars

Ingredients

  • 2 1/4 cups Cornflakes cereal
  • 1 cup creamy peanut butter
  • 1/2 cup confectioners’ sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup chopped peanuts (optional)

Instructions

Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving some overhang on the sides for easy removal. In a large bowl, mix together the Cornflakes cereal and confectioners’ sugar.

Stir until the cereal is evenly coated.

In a separate large bowl, combine the peanut butter, softened butter, vanilla extract, and salt. Beat with an electric mixer until smooth and creamy.

Add the peanut butter mixture to the Cornflakes mixture and stir until the cereal is well coated.

Press the mixture evenly into the prepared baking dish. Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.

Pour the melted chocolate over the Cornflakes mixture and smooth the top.

If using chopped peanuts, sprinkle them over the top of the chocolate layer. Refrigerate the bars for at least 30 minutes or until the chocolate is set.

Cut into 6 bars and serve.
