- 1 cup rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1/4 cup chopped dried strawberries
- 1/4 cup shredded coconut
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 9 fresh strawberries, hulled and chopped
Instructions
In a large mixing bowl, combine the oats, peanut butter, and honey. Mix until well combined and a dough forms.
Stir in the chopped dried strawberries, shredded coconut, salt, and vanilla extract until they’re evenly distributed throughout the dough.
Gently fold in the chopped fresh strawberries. Be gentle so you don’t crush them.
Use your hands to shape the dough into small balls, about 1 inch in diameter.
You should end up with 9 balls. Place the fruit balls on a baking sheet lined with parchment paper.
Cover with plastic wrap and refrigerate for at least 30 minutes to set.
Once set, store the fruit balls in an airtight container in the refrigerator for up to 3 days.

Here are the Use old-fashioned rolled oats for this recipe, not instant oats. Dried strawberries can be substituted with dried cranberries or cherries if you don’t have dried strawberries on hand.
Peanut butter with added oils can make the dough too greasy, so try to use natural creamy peanut butter.
If using a stand mixer, be gentle when mixing to avoid crushing the oats. Fresh strawberries will release their juice during mixing, making the dough a bit sticky.
