Grandma Snyder’s Oatmeal Cake

There’s nothing like a good old-fashioned oatmeal cake, and Grandma Snyder’s recipe is the best we’ve ever tried. This classic cake is perfect for any occasion – from birthday celebrations to after-school snacks. And it’s so easy to make, even the kids can help!

Ingredients

  • -1 cup rolled oats
  • -1 1/4 cups boiling water
  • -1/2 cup butter, melted
  • -1 cup white sugar
  • -1 cup packed brown sugar
  • -2 eggs, beaten
  • -1 1/3 cups all purpose flour
  • -1 teaspoon baking soda
  • -1/2 teaspoon salt
  • -‘teaspoon ground cinnamon
  • teaspoons ground nutmeg
  • teaspoon vanilla extract
  • 6 tablespoons melted butter
  • 1’%cups packed brown sugar
  • 1%cup evaporated milk
  • 1’%cups flaked coconut
  • 1’%cups chopped walnuts
  • ‘ teaspoon vanilla extra

Instructions

1. Preheat your oven to 350 degrees Fahrenheit.

2. Take a large mixing bowl and cream together half a cup of butter or margarine along with the white and brown sugar.

3. Beat in two eggs until the mixture is smooth, then add in the vanilla extract.

4. In another bowl, sift together the flour, baking soda, salt, cinnamon and nutmeg. Add this dry mixture to the wet ingredients in the large mixing bowl and stir until everything is combined.

5. Pour boiling water over rolled oats and let them sit for a few minutes before adding them into the batter – mix well again until everything is combined evenly.

6. Grease a 9×13 inch baking pan with butter or cooking spray and pour in the cake batter – spread it out evenly with a spoon or spatula so that it’s level all around.

7 Bake for 30-40 minutes or until golden brown on top and an inserted toothpick comes out clean when testing the center of the cake.
