Strawberry Bread I

Strawberry bread is a type of quick bread made with strawberries. It is often made with other ingredients such as flour, sugar, eggs, and baking powder. Strawberry bread can be served plain or with frosting, jam, or cream cheese.

Ingredients

  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 1 ¼ cups vegetable oil or melted butter
  • 1 cup chopped pecans or walnuts (optional)
  • 2-3 cups fresh strawberries, hulled and thinly sliced

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 5 inch pan well.

2. In a large mixing bowl, sift together sugar, flour, cinnamon, salt, and baking soda.

3. In a smaller bowl, beat the eggs and oil then stir in pecans and strawberries.

4. Add egg mixture to the sifted ingredients and stir until just combined before baking for 1 hour or until tester inserted in center comes out clean..
