Ingredients
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup confectioners’ sugar
- 1 large egg
- 1 teaspoon grated lemon zest
- 1/2 teaspoon freshly squeezed lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add the confectioners’ sugar and mix until well combined.
Beat in the egg until smooth, then stir in the lemon zest and lemon juice until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 12-14 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Yield: 5 soft and delicious lemon cookies!

Softened butter is essential for a tender cookie, so make sure to take it out of the fridge about an hour before baking.
Don’t overmix the dough, as it can lead to tough cookies.
Stop mixing as soon as the ingredients come together.
