  • 1 cup unsalted butter, plus more for greasing the pan
  • 1 1/2 cups sugar
  • 1/2 cup light corn syrup
  • 1/2 cup sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 1/2 cups marshmallows
  • 1 1/2 cups chopped walnuts
  • 1 1/2 cups chopped pecans
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

Grease an 8-inch square baking pan with butter and line it with parchment paper. Melt the butter, sugar, corn syrup, and sweetened condensed milk in a medium saucepan over medium heat, stirring constantly, until the sugar dissolves.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 5 minutes, or until the mixture reaches 235°F on a candy thermometer.

Remove the saucepan from the heat and stir in the chocolate chips until they’re melted and the mixture is smooth. Stir in the vanilla extract.

Let the mixture cool slightly, until it reaches 115°F to 120°F.

Stir in the marshmallows, walnuts, pecans, salt, and baking soda until they’re evenly coated with the chocolate mixture. Pour the mixture into the prepared pan and smooth the top with a spatula.

Let the rocky road cool and set at room temperature for at least 30 minutes before cutting into squares and serving.

Notes

Rocky Road Grease the pan thoroughly to prevent the rocky road from sticking and to make it easier to remove once set.

Make sure to stir constantly when melting the butter, sugar, corn syrup, and sweetened condensed milk to prevent scorching.

If you don’t have a candy thermometer, test the mixture by dropping a small amount of it into cold water – it should form a soft ball that flattens when removed from the water.
