Ingredients

  • 2 cups rolled oats
  • 1 cup dark chocolate chips
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Preheat your oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper or aluminum foil, leaving some overhang for easy removal.

In a large bowl, whisk together oats, unsweetened shredded coconut, and chopped walnuts.

Set aside. In another bowl, cream together honey, peanut butter, and egg until smooth.

Stir in vanilla extract and pinch of salt.

Add the dry ingredients to the wet ingredients and stir until everything is well combined. Melt the dark chocolate chips in the microwave in 30-second increments, stirring between each interval, until smooth.

Allow the chocolate to cool slightly.

Press half of the oat mixture into the prepared baking pan. Drizzle with melted chocolate, leaving a 1-inch border around the edges.

Top with the remaining oat mixture.

Press the mixture down gently to form a cohesive layer. Refrigerate for at least 30 minutes to set.

Cut into 7 bars and serve.

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

For the oat mixture, make sure to press down gently to ensure everything sticks together nicely. You can also customize the recipe by adding other nuts like almonds or pecans to the oat mixture for added texture.

When melting the chocolate, be patient and take it slow – you want it smooth and silky, not burnt! And don’t overmix the oat mixture with the chocolate or it’ll end up tough.

These bars are perfect for on-the-go snacks or as a post-workout treat. You can also wrap them individually in plastic wrap or aluminum foil and freeze for up to 2 months – just thaw at room temperature when you’re ready for a sweet fix.

If you prefer a chewier texture, bake the mixture for 15-20 minutes instead of refrigerating it.
