Ready Time

40 mins

Yields

4 servings

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • Confectioners’ sugar, for dusting

Instructions

Preheat your oven to 375°F (190°C). Grease four 6-ounce ramekins or mini cake pans and set them aside.

In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

In a large bowl, whisk together softened butter and egg until smooth. Add the milk and vanilla extract; whisk until well combined.

Gradually add the dry ingredients to the wet ingredients and whisk until just combined.

Divide the batter evenly among the prepared ramekins or mini cake pans. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cake comes out clean.

Remove from the oven and let cool in the pans for 5 minutes.

Then, transfer the cakes to a wire rack to cool completely. Dust with confectioners’ sugar before serving.

Notes

Don’t overmix the batter, as it will result in dense cakes.

Make sure to grease the ramekins or mini cake pans properly to ensure the cakes release easily.

If you don’t have ramekins or mini cake pans, you can also use a muffin tin, just adjust the baking time accordingly.

These cakes are best served fresh, but they can be stored in an airtight container at room temperature for up to 2 days.

You can also freeze them for up to 2 months and thaw at room temperature when you’re ready to serve.

If you want an extra crunchy top, bake the cakes for an additional 2 minutes, but keep an eye on them to avoid overcooking.
