Mini Cinnamon Cakes

These little cakes are so simple to make and only take a few minutes in the oven. They’re perfect for when you want a sweet treat but don’t want to make an entire cake. The best part is that they’re covered in a cinnamon sugar topping that gets nice and crispy in the oven.

Ingredients

  • -2 1/4 cups reduced fat buttermilk baking mix
  • -2/3 cup nonfat milk
  • -1/4 cup white sugar
  • -2 1/2 tablespoons ground cinnamon
  • -1 cup chocolate syrup
  • -3 tablespoons margarine

Instructions

1. Preheat oven to 450 degrees F (230 degrees C).

2. Combine reduced fat buttermilk baking mix, nonfat milk, sugar, ground cinnamon, and margarine in a bowl and stir until thick.

3. Drop six very large spoonfuls onto an ungreased baking sheet. Sprinkle lightly with sugar and ground cinnamon before baking.

4. Bake at 450 degrees F (230 degrees C) for 8 to 14 minutes. Serve with chocolate syrup drizzled on top or vanilla ice cream
