Cathedral Window Holiday Bars

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 8 (1 ounce) squares German sweet chocolate, melted and cooled slightly
  • 1/2 cup butter, softened
  • 2 cups confectioners’ sugar
  • 2 eggs
  • 1 (10.5 ounce) package rainbow colored miniature marshmallows
  • 1 cup chopped pecans

Instructions

1. Preheat oven to 350 degrees F (180 degrees C).

2. Mix 1 cup butter, 1 cup brown sugar, and 2 eggs in a bowl. Stir in 2 cups flour and 1/2 teaspoon salt until the dough is well combined.

3. Press the dough evenly into an ungreased 9 x 13 inch baking pan.

4. Bake for 25 minutes, or until the cookie base is golden brown around the edges. Allow cooling completely before proceeding with the recipe instructions below.

5. Melt 8 squares of German sweet chocolate along with 1/2 cup butter in a saucepan over low heat, stirring constantly until melted and smooth. Remove from heat immediately once melted and combined..

6 . Stir in 2 cups of confectioners’ sugar and 2 eggs into the chocolate mixture until it forms a smooth spreadable filling. Add miniature marshmallows and chopped pecans and stir gently to combine. Spread this mixture evenly over top of the cooled cookie base using a spatula and refrigerate for at least 2 hours so that it can set up before cutting into bars to serve.
