Mexican Street Tacos
The vibrant flavors of Mexico come alive in these delicious street tacos! Savory ground beef, seasoned to perfection, is paired with a fresh mix of beans, vegetables, and creamy avocado, all wrapped up in a warm corn tortilla. A flavorful and fun twist on traditional tacos.

Ingredients
- 1 pound ground beef (or ground turkey, chicken, or beans for alternative options)
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 packet (1.25 oz) of taco seasoning
- 1 can (14.5 oz) of diced tomatoes, drained
- 8-10 corn tortillas
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (15 oz) of pinto beans, drained and rinsed
- 1 cup of shredded lettuce
- 1 cup of diced tomatoes
- 1 avocado, diced
- 1 cup of shredded cheese (Monterey Jack or Cheddar work well)
- 1/4 cup of chopped cilantro
- Salt and pepper, to taste
- Lime wedges, for serving
Instructions
Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks. Add the diced onion to the skillet and cook until it’s translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute, until fragrant.
Sprinkle the taco seasoning over the beef mixture and stir to combine. Cook for 1-2 minutes, until the flavors are absorbed.
Add the diced tomatoes to the skillet and stir to combine.
Bring the mixture to a simmer and let cook for 5-7 minutes, stirring occasionally. While the beef mixture is cooking, warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
In a large bowl, combine the black beans, pinto beans, shredded lettuce, diced tomatoes, and diced avocado.
Assemble the tacos by spooning the beef mixture onto a tortilla, followed by a spoonful of the bean and vegetable mixture. Top with shredded cheese, chopped cilantro, and a sprinkle of salt and pepper to taste.
Serve immediately, with lime wedges on the side.
Notes
Use 90% lean ground beef for less fat and more flavor. For alternative options, ground turkey and chicken have less fat, while beans are a great vegan option.
Medium heat is key to prevent burning the garlic and onion.
Use Mexican-style diced tomatoes for added flavor and spice. Warm tortillas for 20-30 seconds to make them more pliable and easier to fold.
For added crunch, top with diced radishes or diced red onions.
Use leftover beef mixture for tacos salads or as a topping for baked potatoes. To make ahead, prepare the beef mixture and bean mixture separately, then assemble just before serving.
Use leftover beans for a quick bean salad or as a dip for chips.
For a spicy kick, add diced jalapeños or sliced hot peppers to the beef mixture.
