Mexican Migas

Ingredients
- 4 cups stale bread, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated cheddar cheese, divided
- 1/2 cup grated Monterey Jack cheese, divided
- 2 large eggs
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 cup diced cooked chorizo or Mexican sausage
Instructions
Preheat your oven to 350°F (180°C).
In a large skillet, heat the olive oil over medium-high heat.
Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for an additional minute, until fragrant.
Add the cumin, smoked paprika (if using), salt, and pepper to the skillet and stir to combine.
Cook for 1 minute.
Add the bread cubes to the skillet and cook, stirring frequently, until they are lightly toasted, about 5-7 minutes.
In a large bowl, whisk together the eggs.
Add the cooked bread mixture, chopped cilantro, diced jalapeño, and cooked chorizo or Mexican sausage.
Stir until well combined.
Divide the mixture into 4 equal portions and shape into patties.
In a greased skillet, cook the patties over medium heat until golden brown and crispy, about 3-4 minutes per side.
While the patties are cooking, sprinkle a quarter of the cheddar cheese and Monterey Jack cheese on top of each patty.
Once the patties are cooked, transfer them to a baking dish and top each with an additional quarter of the cheddar cheese and Monterey Jack cheese.
Bake in the preheated oven for 10-12 minutes, until the cheese is melted and bubbly.
Notes
Mexican Migas is a fantastic brunch option for a crowd, just multiply the ingredients accordingly.
You can customize it to your taste by adding diced bell peppers, diced ham, or chopped mushrooms to the bread mixture.
For an extra crispy patty, refrigerate the shaped patties for about 30 minutes before cooking.
If you want to make it ahead, prepare the bread mixture up to a day in advance, store it in an airtight container, and assemble the patties just before cooking.
Smoked paprika adds a nice smoky flavor but feel free to omit it if you don’t have it on hand.
