Mini Huevos Rancheros

Start your day off right with a flavorful twist on a classic breakfast dish – mini huevos rancheros! Soft tortillas wrapped around scrambled eggs, black beans, and a sprinkle of cheese, all topped with a burst of freshness from lime juice, radishes, and cilantro.

Ingredients

  • 8 large eggs
  • 1 cup cooked black beans, warmed
  • 1/2 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 10 small corn tortillas
  • 1/2 cup shredded Monterey Jack cheese, divided
  • 1/4 cup chopped fresh radishes
  • 1/4 cup diced red onion
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons olive oil

Instructions

In a large bowl, whisk together eggs, cumin, smoked paprika, salt, and pepper. Set aside.

Heat one tablespoon of olive oil in a large non-stick skillet over medium heat.

Pour in the whisked eggs and scramble them until they’re just set, breaking them up into small curds. Remove the eggs from the skillet and set aside.

In the same skillet, add the remaining one tablespoon of olive oil.

Warm the tortillas over medium heat for about 30 seconds on each side, until they’re soft and pliable. To assemble the huevos rancheros, place a tortilla on a flat surface.

Spoon some scrambled eggs onto the center of the tortilla, leaving a small border around the edges.

Top the eggs with some black beans, a sprinkle of shredded cheese, a spoonful of diced radishes, and a spoonful of diced red onion. Sprinkle some chopped cilantro and a pinch of salt over the top.

Repeat the assembly process until all the ingredients are used up, making 10 mini huevos rancheros in total.

Serve immediately, with a dollop of lime juice on top of each one and a sprinkle of chopped jalapeño pepper, if desired.

Notes

Use leftover cooked black beans and store them in an airtight container in the refrigerator for up to 3 days to save time. For an extra kick, add diced jalapeño peppers to the scrambled eggs.

If you want a crisper tortilla, grill them for 30 seconds on each side instead of warming them in the skillet.

You can also customize the toppings, so feel free to get creative! To make ahead, prepare the scrambled eggs, black beans, and toppings, then assemble just before serving.
