- 3 pounds broccoli florets
- 6 slices of bacon, diced
- 1 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 1 cup grated cheddar cheese

- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions
Cook the broccoli florets in a large pot of boiling water until tender, about 5 minutes. Drain and immediately submerge in an ice bath to stop the cooking process.
Once cooled, drain and set aside.
In a large skillet, cook the diced bacon over medium-high heat until crispy. Remove from heat and set aside on a paper towel-lined plate to drain excess grease.
In a large bowl, whisk together the mayonnaise and Greek yogurt until smooth.
Add the grated cheddar cheese, chopped red onion, and chopped parsley. Season with salt and pepper to taste.
Add the cooked broccoli florets to the bowl and toss until well coated with the dressing.

Notes
Make sure to not overcook the broccoli, it should still have a bit of crunch to it.
Also, immediately submerging it in an ice bath after cooking will help retain its bright green color.
