Ingredients

  • 6 large bell peppers, any color
  • 1 pound ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup almond flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons olive oil

Instructions

Preheat oven to 375°F. Cut off the tops of the peppers and remove seeds and membranes.

Place them in a baking dish.

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for an additional minute.

Add the ground turkey to the skillet, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes. Stir in the almond flour, paprika, salt, black pepper, and cayenne pepper.

Cook for 1 minute.

Stir in the cheddar cheese until melted and well combined. Stuff each pepper with the turkey mixture, filling to the top.

Cover the baking dish with aluminum foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender. Garnish with chopped parsley and serve hot.

Notes

You can use any color bell pepper you like, but keep in mind that red peppers will add a bit of sweetness to the dish. If you’re looking for a spicier kick, add a bit more cayenne pepper to taste.

Make sure to not overstuff the peppers, as the filling will expand during baking.

If you’re meal prepping, consider making the turkey mixture ahead of time and storing it in the fridge for up to 24 hours. To freeze, assemble the peppers and freeze before baking.
