Ladyfingers Recipe

Ingredients
- 3 large egg whites
- 1 1/2 cups (190g) granulated sugar
- 1/2 cup (60g) all-purpose flour, sifted
- 1/4 teaspoon salt
- 1/2 teaspoon pure almond extract
- 1/4 teaspoon cream of tartar
Instructions
Preheat your oven to 200°F (90°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour and salt, then set aside.
In a large mixing bowl, beat the egg whites and cream of tartar until soft peaks form.
Gradually add the sugar to the egg mixture, beating continuously until stiff peaks form.
Add the almond extract to the egg mixture and beat until well combined.
Sift the flour mixture over the egg mixture, gently folding until no streaks of flour remain.
Transfer the mixture to a piping bag fitted with a large round tip.
Pipe the mixture onto the prepared baking sheet in long, thin strips, about 3 inches (7.5 cm) long and 1 inch (2.5 cm) wide.
Tap the baking sheet gently to remove any air bubbles, then let the ladyfingers sit at room temperature for 30 minutes to an hour to form a skin.
Bake the ladyfingers for 20-25 minutes, or until firm to the touch and lightly golden brown.
Allow the ladyfingers to cool completely on the baking sheet before transferring them to an airtight container for storage.
Yield: 10 ladyfingers.
Notes
Make sure to sift your flour to remove any lumps and incorporate air, which will result in lighter ladyfingers.
Use room-temperature egg whites for better stability and volume when whipping.
Don’t overmix the batter, as this can deflate the egg whites and result in dense ladyfingers.
For uniform ladyfingers, try to pipe them in a consistent thickness and length.
If you’re not using your ladyfingers immediately, store them in an airtight container at room temperature for up to 2 weeks.
