Granny Cake I

This Granny Cake I recipe is a family favorite. It’s a simple, old-fashioned cake that’s perfect for any occasion. The cake is moist and flavorful, with a hint of spice from the cinnamon. It’s easy to make, and it always turns out perfectly.

Ingredients

  • 2 eggs
  • 1 can (20 oz) crushed pineapple with juice
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar or coconut sugar for a healthier option
  • ½ cup chopped walnuts or pecans, optional
  • ½ cup butter, softened to room temperature
  • ½ cup evaporated milk or regular milk will work too!
  • 1 teaspoon vanilla extract

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined.

3. Pour batter into one ungreased 9×13 inch baking pan.

4. Combine the light brown sugar and the chopped nuts. Sprinkle over the top of cake batter.

5. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake immediately while still warm so that it seeps down into cracks evenly throughout surface area of cake for an extra moist granny cake!

6.(Optional) For a crunchy texture on top: once cooled completely you could sprinkle some more chopped nuts or even some granola on top before serving if desired! Enjoy your delicious granny Cake!
