Fruit Cocktail Cake I

This cake is so easy and so good! It’s perfect for a summer party or potluck. The recipe calls for a can of fruit cocktail, but you can use any kind of canned fruit you like. I’ve made this with peaches, pears, and even mandarin oranges. Be sure to drain the fruit well before adding it to the batter.


  • 1 cup all-purpose flour
  • 1 cup white sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg
  • 1 (16 ounce) can fruit cocktail, drained and diced into small pieces
  • ½ cup packed brown sugar


1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius). Spray one 8 x 8 inch square baking pan with cooking spray.

2. In a medium sized bowl, combine flour, white sugar, salt, baking powder, egg and fruit cocktail. Mix until just combined and pour into the prepared pan. Sprinkle top with brown sugar.

3. Bake at 325 degrees Fahrenheit (165 degrees Celsius) for 45 minutes or until golden brown.
