Filled Cookies II
Whether you’re a fan of chocolate, peanut butter, or both, these Filled Cookies II are sure to be a hit! These cookies have a soft and chewy exterior with a delicious filling in the center. You can make them as large or small as you like, and they’re perfect for sharing (if you can resist eating them all yourself!).
Ingredients
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 1/2 cup shortening
- 2 cups all-purpose flour
- FILLING:
- 1/2 cup any flavor fruit jam
Instructions
1. In a mixing bowl, beat the cream cheese until light and fluffy.
2. Add the butter, shortening, and flour to the mixture and mix together until it forms a flat disk. Chill overnight.
3. Roll out dough onto a lightly floured board and cut circles using a medium sized glass or cookie cutter.
4. Add 1/2 teaspoon of preserves to the center of each circle and crimp edges tightly together to prevent the preserves from spilling out during baking (natural preserves have a tendency to do this due to their lower sugar content).
5. Bake at 375 degrees Fahrenheit for 15-17 minutes until cookies are golden brown in color.
