Yields

Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup cream cheese, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened (for dough brushing)
- Powdered sugar (for dusting)
- Fruit preserves or apricot filling (for filling)
Instructions
Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the softened cream cheese and mix until well combined. Beat in the eggs one at a time, followed by the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the cream cheese mixture, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
Brush the dough with the softened butter. Cut into desired shapes using a cookie cutter.
You can also use a glass or knife to cut the dough into squares or rectangles.
Place the cut-out dough on the prepared baking sheet, leaving about 1 inch of space between each piece. Bake for 18-20 minutes or until the edges are lightly golden.
While the kolacky are baking, prepare the filling by spooning a small amount of fruit preserves or apricot filling onto one half of each piece.
Once the kolacky are ready, allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Dust the cooled kolacky with powdered sugar and assemble by placing the other half of the dough on top of the filled half.
Serve and share with your loved ones!
Notes
If using a confectioner’s sugar, make sure to sift it before dusting the kolacky to avoid any lumps.
For a more vibrant look, use different flavors and colors of fruit preserves or apricot filling.
Chill the dough for at least 30 minutes to allow the butter to firm up and make the dough easier to handle.
You can also make the dough ahead of time and store it in the fridge for up to 2 days or freeze it for up to 2 months.
If the dough starts to stick while rolling, lightly dust the surface with flour.
For a crisper edge, bake the kolacky for 20 minutes.
The kolacky are best served fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
