Carrot Raisin Salad

Ingredients
- 2 cups grated carrots
- 1 cup raisins
- 1/2 cup chopped pecans or walnuts
- 1/2 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
In a large bowl, combine the grated carrots, raisins, and chopped nuts. Toss until they’re evenly distributed.
In a small bowl, whisk together the mayonnaise, honey, apple cider vinegar, cinnamon, salt, and pepper until smooth.
Pour the wet ingredients over the dry ingredients and stir until everything is well coated. Taste and adjust the seasoning as needed – you can add more honey if you like it sweeter, or more vinegar if you like it tangier.
Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes to allow the flavors to meld.
Serve chilled, and feel free to garnish with some extra chopped nuts or a sprinkle of cinnamon if you’re feeling fancy. This recipe makes 6 servings, so feel free to scoop out individual portions or serve it family-style.
Notes
This recipe makes a pretty big batch, so feel free to halve the ingredients if you’re serving a smaller crowd. If you’re not a fan of mayonnaise, you can try substituting it with Greek yogurt or sour cream, but keep in mind it’ll change the flavor and texture a bit.
For an extra crunch, try toasting the chopped nuts in a dry skillet for a few minutes before adding them to the mix.
You can also customize this recipe by adding some diced apples or pineapple to give it more texture and flavor. Don’t be afraid to get creative with the spices too – a pinch of nutmeg or cardamom can add a nice depth to the flavor.
