Ingredients

  • 2 teaspoons pure vanilla extract

Instructions

Preheat your oven to 350°F (180°C).

Grease two 8-inch round cake pans and line the bottoms with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

Set aside.

In a large mixing bowl, use an electric mixer to cream the butter until it’s light and fluffy.

Gradually add the sugar and continue beating until well combined and smooth.

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

Beat in the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the flour mixture in three parts, beginning and ending with the flour mixture.

Beat just until combined.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Once the cakes are completely cool, you can frost and decorate them as desired.

Cut into 7 equal pieces and serve.

Notes

For a tender crumb, make sure to use room temperature eggs and don’t overmix the batter. Also, don’t open the oven door during the baking time to prevent the cakes from sinking.

If you want to ensure even baking, rotate the cake pans halfway through the baking time.
