Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons baking powder
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 cup whole milk, at room temperature

Instructions

Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

Set aside. In a large mixing bowl, beat the eggs until they’re light and fluffy.

Add the softened butter, a tablespoon at a time, beating well after each addition.

Once the butter is fully incorporated, add the vanilla extract and mix until combined. Gradually add the flour mixture to the egg mixture, alternating with the milk, beginning and ending with the flour mixture.

Beat just until combined.

Divide the batter evenly between the prepared pans and smooth the tops. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Once the cakes are completely cool, you can frost and decorate them as desired. Your Angelo Cake is now ready to be devoured!

Notes

Make sure to use room temperature eggs for a lighter, fluffier cake.

Don’t overmix the batter, as this can lead to a dense cake.

Stop mixing as soon as the ingredients are just combined.

For an even bake, make sure the cakes are at the same height in their pans and that the oven is preheated properly.
