Mexican Watermelon Salad

Ingredients
- 5 cups diced seedless watermelon, 1 cup diced red onion, 1 cup diced fresh cilantro, 1 jalapeño pepper, seeded and finely chopped, 1/2 cup crumbled queso fresco, 2 tablespoons lime juice, 1 teaspoon salt, 1/4 teaspoon black pepper
Instructions
In a large bowl, combine the diced watermelon, red onion, cilantro, and chopped jalapeño pepper. In a small bowl, whisk together the lime juice, salt, and black pepper to make the dressing.
Pour the dressing over the watermelon mixture and toss to combine.
Stir in the crumbled queso fresco until it’s evenly distributed. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
To serve, scoop the salad into individual servings or transfer it to a large serving platter.
Notes
For the best flavor, use a ripe but firm watermelon, as it will hold its shape better in the salad.
If you’re concerned about the heat level, you can always use just half of the jalapeño or omit the seeds, which hold most of the heat.
Queso fresco can be substituted with feta cheese if you can’t find it at your local market.
Don’t overdress the salad, as the watermelon will release some juice as it sits.
Letting it chill for at least 30 minutes is essential to allow the flavors to meld together beautifully.
