Ingredients
- 2 cups cooked and cooled macaroni
- 1 cup mayonnaise
- 1 cup diced red bell pepper
- 1 cup diced cucumber
- 1 cup diced red onion
- 1 cup frozen peas and carrots, thawed
- 1 1/2 cups shredded cheddar cheese
- 1 cup diced hard-boiled egg
- 1/2 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
In a large bowl, combine the cooled macaroni, diced red bell pepper, diced cucumber, and diced red onion. In a separate bowl, whisk together the mayonnaise, salt, and pepper until smooth.
Add the mayonnaise mixture to the macaroni mixture and stir until everything is well coated.
Fold in the thawed peas and carrots, shredded cheddar cheese, and diced hard-boiled egg until well combined. Stir in the chopped fresh parsley.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Just before serving, give the salad a good stir and adjust the seasoning if needed. Spoon the salad into individual serving dishes or a large serving dish and serve chilled.
