- 1/2 cup confectioners’ sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon pure vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a medium-sized bowl, whisk together the flour, cornstarch, confectioners’ sugar, and salt.
Set aside. In a large bowl, using an electric mixer, cream the softened butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the flour mixture to the butter mixture, beating until a dough forms. Turn the dough out onto a lightly floured surface and gently knead it a few times until it becomes smooth and pliable.
Roll the dough out to about 1/4 inch thickness.
Cut into desired shapes using a cookie cutter. You can also use a glass or a knife to cut the dough into squares or rectangles.
Place the wafers about 1 inch apart on the prepared baking sheets.
Bake for 18-20 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Store the wafers in an airtight container at room temperature for up to 3 days.
Notes
For a crisper wafer, make sure to chill the dough in the refrigerator for at least 30 minutes before rolling it out. If you don’t have an electric mixer, you can cream the butter and sugar together by hand with a whisk, it’ll just take a bit more elbow grease! Make sure to rotate the baking sheets halfway through the baking time to ensure even browning.
If you want a more delicate wafer, bake for 16-18 minutes instead.
