Watermelon Blueberry And Feta Salad

Ingredients
- 5 cups diced seedless watermelon, rind removed
- 1 cup fresh blueberries
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt to taste
Instructions
Start by cutting the watermelon into 1-inch cubes and place them in a large bowl. You should end up with around 5 cups of diced watermelon.
In a small bowl, whisk together the olive oil and balsamic vinegar until well combined.
Set the dressing aside for now. Add the fresh blueberries to the bowl with the watermelon and gently toss to combine.
Crumble the feta cheese into small pieces and add it to the bowl.
Toss again to distribute the feta evenly. Sprinkle the chopped fresh mint leaves over the top of the salad and toss one more time to combine.
Drizzle the olive oil and balsamic vinegar dressing over the salad and toss to coat.
Season with salt to taste, then cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. After the salad has chilled, give it a good stir and serve to your group of 10!
