Turmeric Rotini Salad

Ingredients
- 8 ounces rotini pasta
- 1 cup frozen peas
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup red bell pepper, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 teaspoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon ground turmeric
- Salt and pepper, to taste
Instructions
Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente.
Drain, rinse under cold water, and set aside.
In a large bowl, combine the cooked pasta, frozen peas, cherry tomatoes, cucumber, and red bell pepper.
In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, turmeric, salt, and pepper.
Pour the dressing over the pasta mixture and toss to combine.
Stir in the crumbled feta cheese and chopped parsley until well coated.
Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Serve chilled and enjoy!
Notes
Use leftover cooked rotini pasta to speed up prep time.
Cherry tomatoes can be substituted with grape tomatoes or even diced bell peppers for a pop of color.
Fresh parsley adds a bright freshness, but feel free to sub with basil or dill if preferred.
Turmeric can be adjusted to taste – start with 1/2 teaspoon and add more for an extra kick.
Prepare the dressing ahead of time and store in the fridge for up to 5 days.
For a vegan version, swap feta cheese with a dairy-free alternative or omit altogether.
This salad is perfect for meal prep – simply divide into individual portions and refrigerate for up to 3 days.
