Strawberry Shortcake Watermelon Pizza
Summer just got a whole lot sweeter with this Strawberry Shortcake Watermelon Pizza! A refreshing twist on the classic dessert, this sweet treat combines juicy strawberries, crunchy shortcake, and refreshing watermelon on a bed of whipped cream, all on a single biscuit “crust.”

Ingredients
- Watermelon, 1 (about 5 pounds)
- Fresh strawberries, 2 cups
- Shortcake biscuits, 14-16 (homemade or store-bought)
- Whipped cream, 1 cup
- Confectioners’ sugar, 2 tablespoons
- Fresh mint leaves, 1/4 cup
- Lemon juice, 2 tablespoons
- Salt, a pinch
Instructions
Start by washing the watermelon thoroughly, then pat it dry with paper towels. Cut off about 1 inch from the top and hollow out the watermelon, making sure to leave about 1/2 inch of the fruit on the bottom and sides.
Scoop out the watermelon flesh and chop it into small pieces, then set aside.
You should end up with about 4 cups of chopped watermelon. In a large bowl, whip the heavy cream until stiff peaks form, then add the confectioners’ sugar and mix until combined.
Wash and hull the strawberries, then slice them into thin pieces.
In a separate bowl, mix together the sliced strawberries, lemon juice, and a pinch of salt. To assemble the pizza, place a shortcake biscuit on a flat surface, then top with a spoonful of whipped cream, a spoonful of strawberry mixture, and a spoonful of chopped watermelon.
Repeat this process until all the ingredients are used up, ending with a dollop of whipped cream on top.
Garnish with fresh mint leaves and serve immediately. You should end up with 7 individual strawberry shortcake watermelon pizzas!
Notes
For a more vibrant dessert, choose a ripe watermelon with a yellow spot on one end, as it will be sweeter.
Use store-bought shortcake biscuits if you’re short on time, but if you’re feeling ambitious, make your own homemade shortcake biscuits for an extra-special touch.
Don’t overlook the importance of drying the watermelon thoroughly; excess moisture can make the whipped cream weep! To ensure the whipped cream holds its shape, make sure the bowl and beaters are chilled beforehand.
When slicing the strawberries, try to make the pieces relatively uniform so they cook evenly and look visually appealing on the pizza.
You may have some leftover whipped cream, so consider using it as a topping for hot chocolate or coffee later in the week! Remember to handle the watermelon gently when hollowing it out, as it can be delicate.
Garnish with extra fresh mint leaves for a pop of color and freshness.
You can prep the strawberry mixture and whipped cream ahead of time, but assemble the pizzas just before serving for the best presentation.
