Snappy Pea And Herb Salad
Snappy fresh peas, fragrant herbs, and tangy feta combine in a refreshing salad that’s perfect for warm weather gatherings. With a light vinaigrette dressing and a pop of color from the fresh herbs, this salad is a delightful twist on traditional green salads, and is sure to become a new favorite.

Ingredients
- 1 cup fresh peas
- 1/2 cup fresh mint leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup chopped fresh dill
- 1/4 cup chopped scallions (about 4-5 scallions)
- 1/4 cup crumbled feta cheese (about 1.5 ounces)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
Rinse the fresh peas under cold water, pat them dry, and set them aside.
In a large bowl, combine the mint leaves, parsley leaves, dill, and scallions.
Toss gently to combine.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper to make the dressing.
Pour the dressing over the herb mixture and toss to combine.
Add the peas to the bowl and gently toss again to combine.
Crumble the feta cheese over the top of the salad and toss one more time to combine.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled, dividing the salad among 7 plates or bowls.
Notes
Use the freshest peas you can find for the best flavor and texture.
Fresh peas are sweetest in the spring, so try to make this recipe during that time for optimal flavor.
Don’t overdry the peas after rinsing them – a little bit of moisture will help the dressing cling to them.
Mint and parsley can be a bit delicate, so be gentle when combining them with the other herbs to avoid bruising the leaves.
Dill can be quite potent, so start with the recommended amount and taste as you go – you can always add more, but it’s harder to remove the flavor once it’s added.
For a lighter vinaigrette, use only 1 tablespoon of olive oil and adjust to taste.
