Ingredients
- 3 medium zucchinis, sliced into 1/4-inch thick rounds
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon grated Parmesan cheese (optional)
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
In a large bowl, whisk together olive oil, salt, black pepper, garlic powder, and dried oregano.
Add the sliced zucchinis and toss until they’re evenly coated with the oil and spice mixture. Spread the zucchinis out in a single layer on the prepared baking sheet.
You might need to do this in batches depending on the size of your sheet.
Roast the zucchinis in the preheated oven for 20-25 minutes, or until they’re tender and lightly caramelized, flipping them halfway through. If using Parmesan cheese, sprinkle it on top of the zucchinis and return them to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Remove the zucchinis from the oven and let them cool slightly before serving.
You should end up with about 9 servings.
Notes
Use high-quality olive oil for the best flavor.
For even roasting, try to slice the zucchinis into uniform thickness.
If you’re using Parmesan cheese, sprinkle it evenly to avoid clumps.
To prevent zucchinis from steaming instead of roasting, make sure they’re in a single layer on the baking sheet.
You can adjust the amount of garlic powder and dried oregano to your taste.
You can also customize this recipe by adding other seasonings, such as dried basil or red pepper flakes.
For crisper zucchinis, roast them for an additional 5-10 minutes, keeping an eye on them to avoid burning.
