Ready Time
40 mins
Yields
4 servings
Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup light corn syrup
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
- Pinch of salt
Instructions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
Add the light corn syrup and heavy cream to the bowl, mixing until well combined.
Stir in the vanilla extract. Add the pecan halves to the bowl, stirring until they’re evenly coated with the sugar mixture.
Sprinkle a pinch of salt over the pecans and give them a good stir.
Drop rounded tablespoonfuls of the pecan mixture onto the prepared baking sheet, leaving about 2 inches of space between each piece. Bake for 10-12 minutes, or until the pecans are golden brown and caramelized.
Remove the baking sheet from the oven and let the pecans cool completely on the sheet.
Once cooled, break the pecans into pieces and serve!
Notes
For a more delicate lace, bake for 8-10 minutes.
For a crunchier lace, bake for 12-14 minutes.
Keep an eye on them, as they can go from perfectly toasted to burnt quickly! If you want a more pronounced caramel flavor, use a higher-quality or darker corn syrup.
Be gentle when breaking the cooled pecans into pieces, as they can be fragile.
These pecans are perfect for snacking, or use them as a topping for salads or ice cream!
